Homemade-salads are a great way to keep things light and healthy for those summer shorts and tanks. A salad is a salad… but the secret “sauce” is what kicks things up a notch and keeps the summer zest alive.
What is that secret sauce you ask? The concept lies in using real, fresh ingredients to create your very own… DRESSING!
Time to throw out those store-bought bottled dressings. It doesn’t compare, I promise you!
Lemon Basil Salmon Salad
Step 1: Gather and prep all your ingredients:
- fresh salmon
- baby spring greens mix
- shredded carrots
- fresh beets
- fresh basil
- white beans
- extra virgin olive oil
- plain Greek yogurt
- salt and pepper
- poultry rub
- Pam (to spray bottom of baking pan)
Step 2: Season the salmon with salt, pepper, and poultry rub—bake for 20 minutes at 350 degrees
Step 3: Concoct the secret sauce
I am terrible at using exact measurements… I’m more of an eye-it type of person! Therefore, tailor the recipe to how many people you will be serving and give it a good guesstimate 😉
Combine in a mason jar:
Squeeze half of a lemon, grate a tiny corner of the lemon peel for zest, cut up a few pieces of fresh basil, spoon out 1/2 cup of plain Greek yogurt, add 4-5 tablespoons of olive oil, salt and pepper to taste

Step 4: Throw your salad together
Peel and chop the fresh beets then toss it together with the lettuce, shredded carrots, and the secret sauce
Step 5: Drain the beans
Step 6: Combine all ingredients together
And finally, have a couple pieces of fresh watermelon for dessert.
